Everybody knows food must be cooked before eating. This because we digest better, because foods has bacteria within, because art of cooking melts together components and aromas. An ancient master of mine, however, reminds that man is born as an animal who eats raw foods. In effect, when we eat anything raw in right quantity, our health improves. Many ill people heal eating that way. But, how do we actually cook foods ? With heat, in first case. Well, heat moves food molecules faster the highest, so union between them breaks.

But, what does it happen inside molecules. Well they take another shape, become “isomers”, that is another way to be. Our intestine, however, recognize foods in accordance with raw DNA codification. If we cook at a too high heat, our intestine will have difficulty to recognize and, then, digest foods. So, it is much better cook at a low temperature. It may take more time, but how much is our health worth?

Step out of the way, you want the real answer? It depends. That\\\'s the answer. There is no one fit all cooking method. Anybody who thinks otherwise has no clue what they\\\'re talking about. There are general principles however. It\\\'s all about applying the proper technique based on the qualities of your product.

Play with food. Use your taste preferences and try to copy dishes you like. Study the recipe to understand the purpose of each step, find ways to simplify to best suit your style of learning, your equipment, your tastebuds, your wallet, and your skills. Adjust methods and widen your repertoire as you gather experience.

There is no one best way of cooking. Every food has a cooking method best suited for it. For chuck roast, you want to cook it long slow and with moisture. So braising is best. But a filet mignon would be destroyed by braising. For that one you just want a quick grill and leave the meat medium rare. If you tried to grill chuck roast quickly, the meat would be so tough it would be in edible. Potatoes lend them selves well to frying or boiling and mashing. Green beans, not so much. Although recently people have been batter dipping green beans and calling them bean fries… The point is you want to know your foods to know which method is best for that food.
